How to Make Authentic Tasting Chai
Updated: Oct 5

This recipe is adapted from:
½ cup whole milk
½ cup water
1-2 Tsp sweetener (I use raw local honey which is added after cooking the chai)
1 Tsp loose tea, after much trial and error Davidson’s has the perfect taste:
Davidson's Organics, English Breakfast, Loose Leaf Tea, 16-Ounce Bag https://geni.us/eah31
1/8 to 1/4 Tsp chai masala (I use ¼ tsp, recipe below)
Bring tea to a boil, whisking as needed, cover, sit 15 minutes, bring to a boil, pour through a mesh strainer into cup, stir in honey, enjoy!
Chai Masala
I use either organic Simple Truth Spices (Kroger) or bulk spices from the local organic food Co-op (PCC).
5 tsp ground ginger
5 tsp cinnamon
5 tsp cardamom
½ tsp cloves
½ tsp nutmeg
(optional 5 tsp ground pepper or less based on taste – I do not add this)

Note:
You can make smaller batches to suit your taste. I have made batches with closer to 4 tsp each for the ginger, cinnamon, cardamom and 1/2 tsp each cloves and nutmeg which taste good too. The volumes are small enough that you can adjust proportions with each batch until you find your perfect taste. The original recipe makes a very large batch, and I was having trouble accurately measuring the smaller gram amounts on my scale when I cut the recipe down. So, I started scaling down and using teaspoons as I adjusted proportions. These are the measurements for the ground spices in the original recipe if you’d like to try (160 g black pepper, 125 g ginger, 50 g cinnamon, 50 g cardamom, 5 g cloves, 5 g nutmeg)
